Instructions:

A great noodle dish for any occasion:

1. Heat oil in heated wok until it almost begins to smoke. Add garlic and grated ginger root and sweat over medium heat for 30 seconds, stirring frequently.

Add baby corn, snow peas, carrot and bell bell pepper sticks and roast for about 5 minutes until vegetables are soft but still crunchy.

3. add spring onions, bamboo shoots and tofu and roast for 2 min.

4. Stir in sherry or possibly Chinese honey, rice wine, rice vinegar, soy sauce, vegetable soup, and cornstarch and bring to a boil. Reduce to low heat and simmer 2 min. until everything is heated thoroughly together. Form into preheated serving bowls and bring to table on the spot.

Serve this dish with noodles or fluffy long grain rice for a filling and tasty Far Eastern meal.
