Sear the meat, add the diced melanzani and fry briefly.

Deglaze with the red wine and let it reduce a little. Add the diced tomatoes. Season with salt, pepper, thyme, rosemary and a little cinnamon. Let it simmer for an hour.

Season the venison goulash to taste, serve with pasta and sprinkle with some fresh basil.
