Dice the mushrooms, shallot and garlic clove and sauté in oil. Season well with salt and freshly ground pepper and set aside. Melt the butter in a saucepan, add the flour and heat until light yellow. Add water in portions. Stir the quantity heartily until it is without lumps. The roux must come to a boil repeatedly after adding the liquid. Make the sauce on low heat for about five more minutes, then add the sauteed mushrooms and cool.

Put meat between foils and flatten. Season with salt and pepper. Spread the cooled mushrooms evenly on top, roll up and tie.

Sauté onions with oil in roasting pan. Add roulades and extinguish with red wine. Add peppercorns and bay leaves and put in the oven at 220 °C for 45 minutes. Then remove briefly and add a little more red wine. Roast in the stove for another ten min.
