Instructions:

For the winegrower pancakes with grapes, first prepare the dough. Crumble the yeast into a small bowl, sprinkle with sugar and add 50 ml of lukewarm water.

Mix everything well until the yeast has dissolved and let it rise covered in a warm place for about 15 minutes. Then mix the flour with 3/4 tsp salt. Add the yeast mixture, the oil and 130 ml of lukewarm water and knead everything into a soft dough.

Dust with flour and let the dough rise, covered, in a warm place for about 45 minutes.

Meanwhile, for the topping, peel the onions, cut in half lengthwise and slice into thin strips. Clean and wash the endive and cut into strips about 1 cm wide. Wash the grapes, cut them in half and remove the seeds if necessary, chop the walnuts coarsely.

Heat the oil in a pan, sauté the onions until golden and remove. Melt the butter in the pan, add the lettuce and stir over high heat. Season with salt and pepper and drain in a sieve.

Preheat the oven to 225°, line a baking tray with baking paper. Knead the dough again and divide it into 6 pieces. Shape each piece of dough into a ball on a little flour and roll out to about 1/2 inch thick, forming a thicker edge. Place the patties on the baking sheet.

Mix sour cream, curd cheese and egg well, add salt and pepper. Stir in half of each of the onions, bacon and lettuce and spread the mixture on the patties. Add remaining onions, bacon and lettuce as well as grapes and walnuts.
