Grease the bottom of the tart pan and cover with crumbled wholemeal bread. Knead mince mei egg (1) together, season with salt, season with pepper, spread evenly on the bread crumbs and smooth.

Clean leek and cut into narrow rings. Remove peel from apple and cut into wedges. Melt butter. Sauté leek and apple pieces in it. Add sage. Pour in win, steam for about 7 minutes.

In the meantime, remove the crust from the mixed wheat bread, knead together with the remaining eggs, the whipped cream (2) and half of the cheese. Mix the cornstarch with the whipping cream (3) and thicken the leek-apple mixture with it.

Season with salt, pepper and a little sugar and spread on the minced meat layer. Spread the wheat bread mixture evenly over the top and smooth it down. Sprinkle with remaining cheese and bake in a heated oven at 225 °C for 20 to 25 minutes.
