For the Wachau apricot dumplings, boil the potatoes until soft, peel and mash. Mix the semolina with the potatoes and let cool.

Then add the yolks, salt, melted butter and flour and quickly work into a smooth dough.

Wash and dry the apricots, remove the seeds and put a piece of sugar cube in each apricot instead of the seed.

Form the dough into a roll, divide into equal sized pieces and form flat discs with floured hands. Wrap one apricot at a time with the dough.

Bring salted water to a boil in a large pot and simmer the apricot dumplings just gently for 8-10 minutes. In the meantime, melt the butter and toast the breadcrumbs.

Roll the finished apricot dumplings in the butter crumbs, sprinkle with powdered sugar and serve.
