Heat a little oil in a pan and sear the slightly thawed patties.
Then reduce the heat and slowly fry the meat until a core temperature of 62 °C is reached (use a meat thermometer).
Just before reaching this temperature, place a slice of cheese on each patty and allow to soften.
While patties are frying, peel onions and cut into rings. Slice the tomatoes. Wash lettuce.
Sauté onions in a little butter, sprinkle with sugar and caramelize briefly. Deglaze with balsamic vinegar.
Cut burger buns in half horizontally and lightly toast on cut surfaces (in a skillet or toaster oven).
Assemble burgers: Place bottom half of bun, lettuce, tomatoes, patty with cheese, onions and top half of bun on top of each other.
