Warm Chocolate Cake with Pears

For the chocolate cake, melt the chocolate with the butter in a water bath and allow to cool slightly. Grease six ovenproof ramekins and sprinkle with sugar.

Beat eggs, egg yolk and 60 g sugar until creamy. Stir in flour and melted chocolate. Fill the ramekins 3/4 full with the chocolate mixture and bake in a hot oven at 175 °C for approx. 10 – 12 minutes.

Peel, quarter, core and cut the pears into wedges. Melt 2 tablespoons of butter in a pan and sauté the pears briefly. Sprinkle 1 – 2 tablespoons of sugar on top and let it caramelize slightly. Add the apple juice and bring to the boil.

Remove the chocolate cakes from the oven, turn them out immediately, pour the melted chocolate over them and serve with the hot pears.
