Warm Chocolate Cake with Vanilla Pears

Instructions:

For the warm chocolate cake with vanilla pears, first grease small ramekins (or melange cups) with melted butter. Add cocoa powder and spread all over. Remove the rest by tapping.

Cut chocolate into small pieces and melt over a water bath. Add butter, stirring until smooth. Let cool briefly.

Beat eggs, yolks and sugar in a mixing bowl until foamy, slowly add the flour and finally stir in the chocolate mixture. Pour the mixture into the molds (¾ full) and chill in the refrigerator for at least 1 hour.

Bake in the preheated oven at 200 °C (top/bottom heat) for about 10-12 minutes.

For the vanilla pears, place the pears in a saucepan with the sugar and lightly caramelize. Add the remaining ingredients and simmer, covered, until the pears are firm to the bite.

Turn out the warm chocolate cake from the molds and serve with the vanilla pears.
