For the sardines in saor, first prepare the marinade. To do this, cut the onions into fine strips, also finely chop the garlic. Sauté both in olive oil until translucent. Add the sugar and let it melt over a low heat, stirring constantly.

Deglaze with white wine and balsamic vinegar, add vegetable soup and bring everything to a boil. Add pine nuts and raisins. Let simmer a little longer, then remove from heat.

Wash the sardines inside and out under cold running water and pat dry very well with kitchen roll. Heat oil in a pan for deep frying (180 °C). Turn the sardines in flour and fry in hot fat. Drain on paper towels and season with salt and pepper.

Place the sardines on a large platter, pour the marinade over them and sprinkle with chopped parsley.
