For the wholemeal pancake, beat the egg whites. Mix milk with yolks and flour until smooth. Then fold in beaten egg whites.

In a non-stick pan, slowly fry on the first side (on low heat). After about 15 minutes, flip to the second side and continue to slowly fry for about 15 minutes until the schmarren is golden on both sides.

Try to pick it apart. If the Schmarren is still very soft on the inside, let it set a little more on the lowest setting.

Cut the wholemeal pancake into pieces, fry a little more if necessary and sprinkle with powdered sugar.
