For the wholemeal spelt dumplings, melt the butter, add the milk and heat slightly. Whisk the egg into the lukewarm milk. Mix the bread cubes with chopped parsley and salt.

Pour over the milk, mix and let stand for about 1 hour (the bread cubes should be soft). Then bind with some wholemeal spelt flour and form dumplings.

Put them into boiling salted water and let them steep for about 15 minutes.
