For the Italian-style wild boar chops, first rinse the wild boar chops under cold running water, dry them and rub them with rosemary, pepper, salt and crushed juniper berries.

Heat olive oil and roast the meat in it for about 5 minutes on both sides, keeping the meat pink inside. Let it cool down.

Peel and slice onions and sauté in drippings until translucent. Rinse zucchini, cut into slices, add to onions and steam. Place tomatoes briefly in boiling water, rinse in cold water, peel, remove stalks, dice, add to vegetables and heat briefly (vegetables should still be crunchy). Season with basil and oregano, remove from heat and season with salt, pepper and wine vinegar.

Arrange the cooled vegetable mixture on a plate, place the Italian-style wild boar chops on top and garnish with tomato florets and herbs.
