Just look at the many destroyed gardens in rural areas. House and garden owners in forest edge proximity are little enthusiastically, if at night the wild boars were there. Preheat the oven to 150 °C. Cut the meat into large cubes, season with salt, pepper and a little paprika, brown in clarified butter in a frying pan, extinguish with red wine and clear soup and transfer to a casserole. Add rosemary, thyme and marjoram and place in the oven. Turn the oven down to 100 °C after 120 minutes. Cook for a total of four hours. After 2 hours add the tomatoes, after 3 hours add the black olives and a tsp. of basil. Season with salt, black pepper and possibly some red wine. Cook the gnocchi according to the instructions on the packet, coarsely chop the sage, fry the butter in a large frying pan, roast the sage for a minute, then toss the still hot, drained gnocchi and serve with the ragout.
