Wash the wild garlic, pat dry and finely chop or crush in a mortar.

Cut the room-warm butter into small pieces.

Gradually mix the butter with the wild garlic, season with salt, pepper and lemon juice.

You can now serve the wild garlic butter fresh right away or freeze it.

Wild garlic butter is perfect for storage. Either form the butter into a roll or use a piping bag to pipe small florets or pour the butter into ice cube molds.

Allow the wild garlic butter to get very cold in the refrigerator and then freeze as a whole roll or individually portioned.
