For the wild garlic soup, sauté the finely chopped onion in the vegetable cream (or in oil or butter). Peel the potatoes and cut into small cubes, add to the onions and fry briefly.

Deglaze with the vegetable soup and simmer until the potatoes are cooked. In the meantime, wash the wild garlic, cut off the stems and roughly chop the leaves.

Remove the soup from the heat, add the crème fraîche and wild garlic and puree all with a hand blender until smooth. If necessary, season with salt and pepper. Do not boil again, but serve immediately!
