For the wine jelly, reduce the veal soup to about two-thirds. Reduce the wine to half as well and mix with the soup.

Season well with salt, pepper and a little vinegar to taste.

Soak the gelatine, squeeze out and stir in.

Let the wine jelly sulk overnight in the refrigerator and then chop finely.
