For the wine soup, cook rolled barley, raisins and a stick of cinnamon in water for 45 minutes. Add white wine and sugar

Beat two egg yolks with a little sugar and fold into the broth. If necessary, add a dash of rum to taste.

Arrange the wine soup in a tureen with a small heap of beaten egg whites and serve.
