For the winter compote, peel pears, divide into six parts and remove the core. Place pear wedges in a saucepan and add the maple syrup, water, orange sugar and lemon zest.

Bring to a boil, cover and turn off the heat, then remove the pot lid and peel the oranges over the compote, including the white skin, so that the escaping juice runs into the compote.

Now slice the oranges and add to the compote, depending on the sweetness of the fruit, possibly season with more maple syrup and enjoy the winter compote best lukewarm.
