For the woodruff ice cream with pistachios, rinse the woodruff with cold water and spin dry. Bring sugar, milk and whipping cream to a boil and let the woodruff steep for 20 minutes.

Put the egg yolks into a rounded metal bowl and pour the woodruff cream through a fine sieve. Stir the mixture in a hot water bath until it becomes thick and creamy, then let it cool. Chop the pistachios and add them. Freeze in the ice cream maker or in the freezer.

Serve the woodruff ice cream with pistachios in a stanitzel or cup.
