For the zucchini and melanzani steaks, first clean and rinse the zucchini and cut lengthwise into two-inch-thick slices.
Rinse and dry the melanzani and cut diagonally into slices. Rub melanzani slices with salt and let sit.
Mix the spice mixture and cooking oil into a marinade and brush the zucchini and melanzani with it before grilling.
While grilling, perhaps brush with the remaining marinade. Season the zucchini and melanzani steaks to taste.
