For the fried zucchini in olive oil Wash zucchini and cut into oblong slices (about 4mm).
It is best to fry them in a cast iron pan (or on the grill) in olive oil with salt and pepper.
Once they are golden brown, layer them in a container.
Then sauté the garlic with plenty of olive oil and herbs and pour over the zucchini.
Either chill or while still warm, drizzle with a little balsamic vinegar and enjoy sprinkled with Parmesan cheese.
