For the zucchini with herbs, wash the zucchini, peel if necessary and remove the seeds. Then cut them into slices about 0.5 cm thick.
Peel the onions and garlic and cut into rings or pieces. Layer everything together with the herbs in screw jars.
Boil the vinegar with 1/2 l of water, the salt, the honey and the spices and pour it over the zucchini slices. Cover the jars.
The next day, drain the liquid, boil it again and pour it over the zucchini while it is boiling hot.
Immediately close the jars of pickled zucchini with herbs and store in a dark, cool place.
