1. fry the bacon in a dry hot frying pan until crispy, turn once to the other side, remove from the frying pan and drain on kitchen roll.

Grate the cheese, roughly chop the bacon and set aside a small amount of both. Spread the remaining cheese and bacon evenly over the pancakes. Fold each pancake into a triangle and place in a greased ovenproof dish. Sprinkle with the remaining bacon and cheese. 3.

Bake in the heated oven at 180 °C (gas 2-3, convection oven not recommended) for 15 minutes on the 2nd rack from the bottom.
